Beet Pickled Eggs
1 cup vinegar, white or cider
4 tablespoons of sugar
4 teaspoons of brown sugar
1 ½ tablespoons pickling spice
2 cans of beets, sliced or whole
1 ½ dozen hard boiled eggs
1 large onion, sliced
1 very large airtight glass Mason jar
• Combined vinegar, sugars, beet juice (setting beets aside) and pickling spice in a sauce pan
• Bring to a boil, then simmer for 5 minutes
• Remove from heat and let completely cool
• Place hard boiled eggs in Mason jar, add beets and onion slices
• Pour beet juice mixture over the top
• Seal jar tightly and refrigerate for 3-4 days
